Honors Students Learn French Culture by Cooking
French Cuisine Class taught by UMD Chef

Duluth, MN – Two Chefs are teaching honors students about French culture through cuisine on Tuesday, April 4, 2017 from 6:00 to 9:30 p.m. in the Residence Hall Dining Center located at 1208 Kirby Drive, Plaza Food Court Duluth, MN 55812.

Collin Maki and Tom Linderholm, Dining Services executive chefs, are teaching students to make focaccia bread and demonstrating meal prep techniques to teach them about the culture and identity of France. “It’s not only a way for the students to learn about food and French culture, it’s also a way for us to share our stories and experience,” says Linderholm.

The class, French Cuisine Exploring French Culture Through Food, is taught by Associate Professor of French Studies Dr. Dana Lindaman. “My students and I cook together, eat together, discuss theoretical readings, and learn techniques about French cooking. However, more importantly, they are given the opportunity to learn about French culture in terms of the rich experience of building relationships in the process of purchasing, cooking, and sharing French cuisine.”

Conor Maki won the gold medal at the National Association of College and University Food Services (NACUFS) regional conference in February. Conor is now preparing for the National Conference held in Nashville, Tenn. this July.
